Menu : Week of 3/1- 3/7

Monday: Asian Stir Fry Chicken:

1 pound chicken cut into strips, golden cream of mushroom soup, soy sauce, garlic powder, veg. oil, mix frozen veggies, rice

Stir-fry chicken in oil until browned, add soup, soy sauce, garlic powder, bring to boil, add veggies, simmer

Cook 4 cups rice, serve chicken stir fry over rice

Tuesday: Chili

Someone gave us some canned chili I will be using mixed with some ground meat and cornbread on the side

Wednesday: Farmhouse Chicken Dinner:

flour, pepper, bone-in chicken breasts, italian dressing, baby carrots, onion, chicken broth, rice, cream cheese, parsley

Coat chicken in a mixture of flour and pepper, cook chicken in non-stick skillet with dressing, when it’s golden brown turn over and add carrots, onions, 1 cup broth. Cover, reduce heat. Simmer until carrots and meat are tender. Prepare rice and spoon this chicken mixture over it. Add cheese to remainig broth in skillet, when cheese melts and is well blended, pour over chicken and rice. Sprinkle with parsley.

 

 

Thursday: Spaghetti

Ground meat from the same 5 pond roll, spaghetti sauce I got for nearly free a few weeks ago, mixed with some of mine. Served with a loaf of bread, and a side salad

 

Friday: Beef Tomato Dinner

2 cans tomato soup, soy sauce, vineagr, garlic powder, pepper, broccoli, boneless beef round steak cut into strips, rice

Mix soup, soy, vinegar, garlic, pepper, and beef in crock pot. Cook for 7-8 hours on low. Stir mixture, add broccoli, cook on high for 15 minutes, serve over rice

Saturday: Sloppy Joes/ corn dogs for lunch

We usually don’t do a big lunch on the weekends so we are going to do some store bought frozen corn dogs for lunch on Saturday.

For Dinner we’re going to make our own sloppy joes with tomato sauce, sloppy joe seasoning packet, and the leftover ground meat

 

**You’ll notice that we use a lot of beans, rice and pasta, and not so much meat. You can really make a meal much larger by using these staple items to make a little bit of meat enough to feed a whole family.

** Our grocery budget is $300-$350 a month for a family of six so to stay in that budget, we must plan our meals wisely 🙂
